MSG (monosodium glutamate) is a chemical that many restaurants, especially Chinese, add to food to enhance the flavor. Sometimes they put so much in you can taste it – salty and metallic.

Some people are sensitive to MSG; it can cause headaches. So many of my customers do not want it in their food, that is why I choose to no longer use it in my entrees.

If your favorite dish tastes different, this is why. MSG does work. It does enhance and separate the flavors of meats, fish, poultry, and vegetables. Chinese food tastes different without it. To compensate, I am using extra-rich chicken stock in all dishes, including vegetarian dishes (water-based available upon request). We make this daily, steeping it for hours.

We also use healthier non-hydrogenated oil containing no trans fat in all of our cooking and natural chicken broth in our soups.
